Day 2: Wed, Oct 20 2010 - Hanoi

You will be picked up at your hotel by private car with an English speaking guide and taken to visit the Mausoleum of Ho Chi Minh and his former residence, One pillar Pagoda, and the Temple of Literature. For lunch, enjoy a lovely meal at a local restaurant. After lunch, continue your city tour to your choice of one of Hanoi's many museums, including Fine Art, History, Revolutionary, War, and Ethnology, then head to Hoan Kiem Lake and Ngoc Son Temple and experience a 1 hour cyclo tour. Finish your day off at the Thang Long Opera Theatre for a traditional Vietnamese water puppet show.

Day 3: Thu, Oct 21 2010 - Halong Bay

You will be picked up at 8am for your private transfer to Halong City. This takes roughly 3 hours. You may stop enroute to admire the local scenery. Arrive at the port around 11:30am and board the ship. Begin sailing and pass through a magical bay, where thousands of sculpted limestone islands rise from the waves like dragons’ teeth. After lunch, take a short trek to a nearby summit for a panoramic view of the bay dotted with golden sails, go swimming on a quiet beach or sunbath on the sundeck. Later in the afternoon, you will visit an interesting fishing village with an opportunity to interact with local people who have been living in the bay for almost three generations. Back on board enjoy a lavish dinner. Overnight on board.

Wake up to Tai Chi exercises on the sun deck and continue cruising the bays. Breakfast buffet will be served in the restaurant, then you will visit the limestone grotto. Disembark in Halong City around 11am and transfer back to Hanoi with your private vehicle, guide and driver.

The historic and quaint nature of UNESCO World Heritage Site Hoi An is perfect for exploring. As a former fishing village set on the banks of the Thu Bon River and strategic trading port for Southeast Asia, centuries of Chinese and Japanese influence have left their unique mark on this town. Your private driver and English-speaking guide will greet you at your hotel and bring you to the edge of the old town for a half day of exploration. As the streets of the old town are very narrow, cars are not permitted in the historical center. Start with the 200-year-old Tamky House, a beautifully decorated home that has been lovingly preserved over seven generations. Continue on foot to the Museum of Trade Ceramics, with fascinating pottery artifacts from all over Asia and the Middle East. Take a short walk through the historic town to the 17th century Chinese Chua Ong Pagoda – the neighborhood around it has distinctly Chinese inspired buildings and is lovely to explore at a relaxed pace. End with a visit to the Hoi An Market, reputed to be one of Vietnam’s best. Fresh produce and fish are on offer, and this is also an opportune location to pick up some fine silk.

Day 6: Sun, Oct 24 2010 - Hoi An

You will be picked up by car today for a full day tour. Join a small group for the cooking school portion. Pick out your ingredients at the local market and take a boat 25-minutes up the river to the cooking school. Watch the fishermen cast their nets on the water and experience the life along the river. We arrive at a small town and walk to the cooking school. The lesson is in an open-air pavilion next to the river. Chef Thanh will teach you how to cook a traditional Vietnamese meal. Work off that lunch with an afternoon cycling tour to Cua Dai beach (5km) and relax. You will return back to your hotel by about 4:00PM.

The history of Ho Chi Minh City has many layers, telling a tale of decades of external influence from the Chinese and the French. With your private driver and English-speaking guide, start your visit today by exploring Cholon, the city’s Chinatown and widely regarded as the largest one in the world by area. The city used to be known as Saigon-Cholon until Vietnam’s independence from France in 1955. From here continue to the Jade Emperor Pagoda, also known as Phuoc Hai and regarded as one of the most interesting pagodas in the country. Built by the Cantonese community around the turn of the 20th century, it is still busy with worshipers. Filled with smoky incense, the pagoda with its elaborately carved figurines and decorated panels of carved gilt woodwork, is dedicated to Buddhist and Taoist deities. If you only visit one pagoda in the city, this should be the one. Finally, head over to Dong Khoi Area in the center of the city where the French colonial presence can be felt at the Notre Dame Cathedral, a Catholic Basilica commissioned entirely of imported French building materials. End with a visit to the Saigon Central Post Office, a stunning architectural marvel with rich Gothic, Renaissance and French influences.

Day 8: Tue, Oct 26 2010 - Ho Chi Minh City

Tay Ninh is home to the intriguing Cao Dai sect, a uniquely Vietnamese religious movement that incorporates elements of Buddhism, Taoism, Confucianism, and even Catholicism from decades of external influence. To get there, your private driver and English-speaking guide will head 60 miles into the countryside northwest of Ho Chi Minh City to Tay Ninh, home of the Great Temple, or Holy See. Cao Dai Temple (as it is more commonly known) was built in a unique architectural style that reflects its blended traditions. Stop for a relaxing lunch at a local Vietnamese restaurant before continuing to the Cu Chi Tunnels to explore an incredible feat of perseverance and war time engineering born of necessity, and gain important insight into the prolonged struggle against invading armies. The residents of Cu Chi took the war underground into a highly developed network of tunnels that at its height stretched as far as Cambodia and included meeting rooms, kitchens and triage areas. Imperceptible from the ground, opposing armies could roll their tanks over the bunkers without causing damage to the tunnels below. Living conditions were harsh – in addition to fighting the war, residents battled food and oxygen scarcity, venomous insects, and cramped living quarters.
